Pale Hall is searching for a talented and charismatic Assistant Restaurant Manager to support the Restaurant Manager and Sommelier in delivering an exceptional food and beverage service to our guests. Passionate about hospitality and experienced in fine dining, with an excellent knowledge of wines, spirits and cocktails, the successful candidate for this role will have the character and personality to engage with our guests, will display strong upselling skills and have the enthusiasm and talent to motivate and inspire the team.

A minimum of two years in restaurant management/supervision is essential, preferably with an emphasis on fine dining. Our team displays the highest standards of personal presentation, and a positive and flexible attitude when business levels vary day by day. We’re looking for someone who will make a positive contribution to the success of our dining experiences, who is proactive and highly driven with a great attention to detail. This is a full time permanent position, five days over seven.

One of the AA Five Red Star hotels in Wales, with AA Three Rosettes and the coveted Michelin Green Star for food sustainability, Pale Hall currently offers two contrasting dining experiences.  The Henry Robertson fine dining room with tranquil views over the lawns serves our four and seven course tasting menus, and the rustic Huntsman bistro offers more relaxed dining from a traditional la carte menu.  Our food is created from locally sourced and sustainable produce with menus changing and developing as we move through the seasons.  With plans for expansion and new outlets, there are opportunities for the right people to grow and develop with us.

This is a full time permanent position, 48 hours per week, five days over seven.

In return we offer a competitive salary of £32,000 per annum, a share of monthly gratuities, generous staff discounts, free meals on duty, on-site parking and the chance to work in a really stunning location with a great team of people.  We can assist with accommodation if required.

Candidates must have the right to live and work in the UK, and be confident that they can commute to the hotel within the shift patterns and requirements of the role. 


To assist the Restaurant Manager in the management of all aspects of the day to day food and beverage operation, ensuring that all areas of responsibility are cleaned and presented to the highest standards on a daily basis.

To be fully conversant with food and beverage related roles and duties to improve efficiency, cost effectiveness and standards wherever possible.

To assist in the management and motivation of the restaurant team, fostering team spirit and developing cohesive and efficient working relationships.

To maintain an successful working relationship with the Head Chef and senior Kitchen team.

To be conversant with the packages, incentives and menus promoted by the hotel on a continual basis, including the components, presentation and delivery of each dish within the restaurants.  To anticipate demand and expectation wherever possible and to promote the hotel services and facilities to maximise sales opportunities and revenue and enhance the guest experience.

To actively participate in the maximisation of hotel revenue.

To anticipate challenging situations and to be confident in handling guest complaints, seeking a solution to achieve guest satisfaction and mitigate negative feedback.

To build a rapport with guests in order to maximise sales opportunities and generate future business.

To carry out ordering and stocktaking procedures if requested.

To help ensure that stock within the department is managed to the agreed levels consistently and professionally.


A minimum of 2 years restaurant supervisory/management experience in a high calibre establishment.

Exceptional personal presentation

Thorough knowledge of restaurant service techniques at 5 star level

Sound knowledge of wine, spirits and cocktails
