The Conservatory: The Conservatory is our fine dining restaurant where we present a set menu based on seasonality and the best local produce. Our guests can feel the warmth of the open fireplace and enjoy the views of the fjord, gardens, and the Sunnmøre Alps.
The Historical Dining Room: Our historic dining hall, where both Roald Amundsen, Sir Arthur Conan Doyle, and royalty have dined, right here, between these historic walls. Our guests can choose from our carefully curated À la carte menu.
Role Requirements

Are you a passionate leader with a flair for exceptional service and culinary experiences? Hotel Union Øye is looking for an engaged and experienced restaurant manager to lead our talented team and create unique food and beverage experiences for our guests. The hotel features two distinct restaurant concepts – The Historic Dining Room with a brasserie concept, and The Conservatory, which focuses on local and seasonal ingredients served in extensive tasting menus. Our kitchen is based on local producers with a modern French approach.
Your role
As a restaurant manager, you will have overall responsibility for the daily operations of the restaurant. You will work closely with our kitchen and service team to ensure a seamless and first-class experience for our guests. The position includes, among other things:
- Recruitment, personnel responsibility, training, and team development
- Ensuring high service standards and guest satisfaction
- Further development of the restaurant and conference concepts
- Ordering supplies, invoice handling, inventory management, and budget follow-up
- Optimizing operations and financial results
- Following up on HSE and quality routines
- Shift planning and time management
- Developing the wine cellar and overseeing the beverage program alongside the F&B Manager
- Creating and evolving menus and restaurant concepts
Who are you?
We are looking for a leader with a strong passion for food, wine, and guest experiences. You have experience from similar positions in the restaurant or hotel industry and can inspire and motivate your team. Additionally, we envision that you have:
- Experience as a restaurant manager or similar role
- A strong service mindset and excellent communication skills
- The ability to work in a structured and results-oriented manner
- Solid knowledge of wine and beverages
- Certification in alcohol licensing and establishment law
- The ability to thrive in a fast-paced environment and make quick decisions
- Availability to work shifts, including evenings and weekends
- Fluency in Scandinavian and English, both spoken and written
