Bartender
A true artist, the bartender combines expertise, creativity, and knowledge of local ingredients to craft unique and innovative cocktails. Each creation is an invitation to discover new flavours, aromas, and sensations.

Sommelier
Drawing on an in-depth knowledge of wines, terroirs, grape varieties, and producers, the sommelier guides guests in selecting the perfect wines to accompany their dining experience. Every food and wine pairing is an opportunity to bring together the creativity of chefs and the passion of winemakers.

Captain
Responsible for the smooth running of service across several tables, the captain delivers impeccable service while coordinating the dining room team to ensure guests enjoy an elegant and memorable experience.

Maître d'Hôtel
As the conductor of the dining room, the Maître d’Hôtel oversees every aspect of service, ensuring perfect harmony between the kitchen and front of house—the key to a seamless and refined guest experience.
Recognising the expertise of our Food & Beverage professionals
Each year, together with our closest partners, we celebrate the expertise and dedication of our team members through a range of professional awards. In recognition of their creativity, mixologists are honoured with the Cocktail Trophy.

In 2025, the Cocktail Trophy was awarded by Relais & Châteaux, Absolut Elyx, and Monkey 47 to Kieran Klein Nulend, mixologist at Château Neercanne in the Netherlands.
To celebrate the 70th anniversary of Relais & Châteaux, Kieran Klein Nulend created the Last Cocktail, a signature creation inspired by the gardens and orchards of Château Neercanne. Built around Monkey 47 gin, it features rosemary and pear grown on the estate, finished with a local sparkling wine. The result is a refreshing and evocative cocktail that captures the spirit of its surroundings.
